What to review after ingredient costs rise

When one purchase price changes, the effect depends on how much of that ingredient each recipe uses. Review the affected products before changing every selling price.

Confirm the new purchase input

Check the supplier price, purchase quantity, unit, and date. Make sure the new value describes the same package or unit as the old value. Do not replace a different package size without checking the relationship.

Look at usage, not only the package price

A large package-price change may have a small effect on a recipe that uses little of it. A small change can matter when the recipe uses the ingredient heavily. Review cost per recipe unit and cost per sellable unit.

Check the price and margin again

Recalculate the recipe with the actual new input. Compare cost, selling price, profit, margin, and markup. If the result no longer fits your target, consider the selling price, recipe, portion, packaging, or a different supplier.

Keep the decision visible
